Jupe sorry for all these questions. Btw I encountered many difficulties in Castle Age when I'm with a Cav civ agains another Cav civ. For example, today I was playing with Mongols against Franks and in Castle Age I started to make Camels when my opponent has gone for Knights plus Pikemans with Franks. I take more villagers to gold to try to make scorps against his pikemans and countered his knights with my camels but this strategy was not very effective because he has killed my scorps with a push Pikemans + Knights so I couldn't protect my scorps with Camels. So the question is when my opponent goes for a combination Knights + Pikemans what I can do?

I would also like to know this. I also have a similar difficulty when I am going for knights while opp is going for knight and pike. I try making skirms but they kill the skirms with the knights and I am not able to fight the knights because of pike

I've tried to make some monks with my knights and I must admit that it works really well. If is a cav matchup, when you reach castle age make 2 or 3 monks (naturally you have to send more villagers to gold), make some skirms to kill his pikemans and try to not fight initially with your knights. Place the monks behind your army and if your opponent goes for the skirms, use your monks to convert his knights while skirms have to go to his pikemans, then you can fight with your knights.

It's overall not that easy to have one solution fits all situation here. It depends heavily on the comitment your opponent has to either knights or pikeman (meaning if he is investing more into knights rather than pikes meaning something like 1s+1b into more stables or if hes doing 1s+1b into more barracks)
However one weakness that comp has is the fact that it is only able to properly force fights with siege (forward siege) so if you are pure knights you have the mobility advantage, and if the sperman are defensive they are no immediate threat. What you should never do however is stop making knights yourself, unless its a situation of no knights and full pikes + siege, then your options are to try and make xbow and knights or xbow and siege, alternative option with some civs could also be longswords, however they are overall worse unit, but against very all in ish pushes decent defensive tool. Other alternative is simply defensive position that is unbreakable (castle defense, or guard tower defense)
If you could tell more in detail of what type of kt+pike situation you are more refering to i would be happy to think it more thoroughly
